The dinner service runs from December 26 to January 4, and Executive Chef Evan LaValley describes it as a fun reimagining of classic diner fare. The decision to create this pop-up came from team brainstorming sessions aimed at keeping the restaurant's offerings fresh and appealing to guests. LaValley stated that the diner theme emerged as a popular choice among team members, with many having personal experiences related to diners. Previous dinner pop-ups at the Park City location have included sushi nights and a noodle house, but the diner theme stood out for its familiarity and nostalgic value. The menu features creative interpretations of traditional diner dishes, such as Korean short ribs and eggs instead of the typical steak and eggs, and alternatives like Nashville hot chicken rather than fried chicken. The Hill’s Diner concept emphasizes a quick and casual dining format, catering to skiers and locals seeking satisfying meals without lengthy wait times. Operating hours for the dinner service are from 4 PM to 8 PM, aligning with the closing times of nearby ski resorts. This setup allows patrons to enjoy meals while still in their ski gear. Aside from the food, the pop-up serves as a creative platform for the kitchen team. LaValley noted that rotating concepts help keep staff engaged and allow them to explore new culinary ideas. He expressed that the focus should remain on having fun with food, emphasizing that the dining experience is meant to be enjoyable and lighthearted. Hill’s Diner not only provides guests with comfort food but also encourages the kitchen team to embrace creativity and innovation in their culinary practices.
